My mom has a cookbook full of delicious muffin recipes. This is by far my favorite! I just bought some pears to try it out again. It was even better than I remembered it. You have to try it! Even if you don't love pears...you might just love these!
Here's the recipe:
Pear Cardamom Muffins:
Bake at 375 for 25 min.
2 overripe pears-diced
4 tsp. lemon juice
*mix these two and soak
2 c. flour
1 Tbs. baking powder
1/4 tsp. salt
1/2 c. sugar
*mix dry ingredients
1 egg
1/2 c. melted butter
*in separate bowl, lightly beat egg and add butter
1 6 ounce can pear nectar OR 3/4 c. O.J. ( I used the O.J. and it was just fine)
1/2 tsp. cardamom OR cinnamon
*add these to the butter and egg and add all to the dry ingredients
Lastly, fold pears and lemon juice into batter.
For crumb topping:
Just mix some softened butter, flour, sugar, brown sugar, cinnamon, and oats and sprinkle on tops of muffins before you bake!
