Cream Cheese Manicotti

I hope you all had a good weekend! We had a really great time with family this weekend.  We both have big families so there's always lots of activities taking place. I'm so thankful for our families.

Here is your recipe for the week...

Cream Cheese Manicotti:

It's super yummy. Very similar to lasagna, it just feels a little fancier=) Hope you enjoy...

You'll need:

Oven at 350 until cheese is melted/golden

1 lb. Hamburger meat
1-2 Fresh Cloves of Garlic
1 Jar Spaghetti sauce (your favorite kind)
Manicotti
Mozzarella cheese
Feta Cheese
Grated Parmesan cheese
1/2 block cream cheese
Cottage Cheese
2 eggs
Oregano
salt

I'll be honest, this is not a quick meal...at least for me! Lots of ingredients usually means lots of time... BUT... it is good and I think you'll be happy you made it.

Step 1: Oil pan on stove and add the garlic to pan. Sautee garlic and add meat and salt. Brown Meat.

Step 2: Bring water to boil and add 8 (or so) Manicotti shells. Take out and drain when finished and set on plate.

Step 3: In bowl, combine 2 eggs, 2 cups cottage cheese, 1 cup parmesan cheese, 1/2 cup shredded parmesan, some feta, the cream cheese, salt and oregano (to taste).

Step 4: Add 1 Jar of Spaghetti sauce to the browned meat.

Step 5: Use a spoon to stuff the Manicotti shells with the cream cheese filling. (this part is a little messy...don't get down on yourself!) Place in a pan.

Step 6: Pour the meat sauce on top of shells and sprinkle shredded parmesan and feta on top.

Step 7: Put in oven at 350 until cheese has melted.

Step 8: Put some garlic toast in the oven/toaster oven. Eat and enjoy!

I'd love to hear how yours turns out!  Have a lovely Monday.
